Hành lá rửa sạch, lấy đầu hành đập dập, phần lá 1 nửa thái khúc, 1 nửa băm nhuyễn. Mực ống chọn con nhỏ nhỏ cỡ ngón tay cái, rửa làm sạch. Cho thịt băm trộn đều với tiêu, tỏi băm, hành lá băm, hành tím băm, muối, trộn đều rồi nhồi vô mực lấy tăm xiên cố định. Chiên mực nhồi với chảo dầu 50ml, để lửa nhỏ, khi hơi vàng gắp ra rồi tháo tăm.
Phi đầu hành lá đập dập, cho thêm ớt sa tế rồi cho phần mực vào, thêm đường, nước mắm, cho nước dừa xiêm vào, kho đến khi nước sốt keo keo lại thì bạn cho thêm ớt tươi, hành lá thái khúc, nêm nếm lại nếu thấy chưa vừa ăn rồi tắt bếp.
Thành phẩm là món kho keo keo, mặn mặn, thơm thơm, cay cay, chấm với rau sống hay cải bẹ xanh non, ăn kèm cơm nóng thì ngon tuyệt vời luôn.
